Pinza with chanterelle mushrooms

This is a delightful variation of Pinza, a traditional Italian flatbread pizza, with flavorful red onions, chanterelle mushrooms, and the fresh taste of dill. Buon appetito!

Ingredients:
1 ready-made pizza dough (or make your own)

1 red onion

150g fresh chanterelle mushrooms, cleaned and sliced

A handful of fresh dill, chopped

1 tablespoon olive oil

100g smetana

100g grated mozzarella cheese

Salt and black pepper to taste
  1. Preheat your oven to 220°C (430°F).

  2. Roll out the pizza dough on a OneSheet or a OneTray to your desired thickness and shape. (No need to preheat your OnePan trays).

  3. Spread the smetana evenly over the pizza dough.

  4. Sprinkle the grated mozzarella cheese over the smetana.

  5. In a frying pan, heat up the olive oil over medium heat. Add the red onions and chanterelle mushrooms. Sauté them until they are tender, and the mushrooms have a bit of color.

  6. Distribute the sautéed red onions and chanterelles evenly over the pizza.

  7. Season with salt and black pepper to taste.

  8. Bake in the oven at 220°C (430°F) for approximately 10 minutes or until the pizza dough is golden brown, and the cheese has melted.

  9. Remove your Pinza from the oven, sprinkle the fresh dill over it, and serve immediately.
